Rolled Ice Cream

The cold, refreshing, flavorful, Ice Cream is a crowd favorite! Ice cream is a must in every home’s freezer, but why go with the basic type of ice cream? This new recipe puts a twist on the classic ice cream and is super fun. Rolled ice cream is something everyone can do and is great to make at home. Rolled ice cream is when you pour an ice cream base (that has not been turned to ice cream yet is still liquid) that can be, for example, vanilla or cheesecake flavored on a really cold surface. You then use scrapers that are used to chop up add ons like strawberries or graham crackers that are mixed in with the ice cream base and spread across the surface, then rolled. You can buy a rolled ice cream maker that comes with the tools on amazon that you have to freeze in the freezer overnight and then use. Or you can get a clean baking sheet which has to be put in the freezer after you spread the ice cream base and toppings on it for about 5 to 10 minutes (until solid). Making rolled ice cream is really fun and a greater way to get creative with your desserts!

Ingredients:

  • 3 cups heavy cream

  • 1 cup whole milk

  • ½ cup granulated sugar

  • ½ cup/167 grams light corn syrup or substitute ⅓ agave syrup or honey

  • ½ tsp fine sea salt

  • You can choose a flavor I recommend or find your own!

Step 1:   

In a saucepan, combine cream, milk, sugar, corn syrup, and salt, and bring to a simmer. Continue to simmer until sugar dissolves, then transfer mixture to a container and refrigerate until very cold, at least 4 hours .

Flavor #1: Vanilla

Slice 2 vanilla beans in half lengthwise and scrape down the slides. Add seeds and pods. Add to the mixture of milk cream and syrup or honey. Put in a strainer after cooling down a bit. Then refrigerate as it says above for at least 4 hours.

Vanilla is good since it is a standard flavor that can have pretty much anything added to it.

Flavor #2: Chocolate

In a small pot, bring ¾ cup cream and 3 tablespoons dutch-processed cocoa powder to a simmer. Put 1 cup of chopped chocolate in a mixing bowl. Pour hot cocoa cream over the chocolate and stir until melted smooth. Make the base using ¾ cup cream and ¾ cup milk, ½ cup corn syrup, ⅓ cup sugar. Stir the chocolate mixture, ¾ cup créme fraîche or sour cream, and 1 tsp vanilla extract into the base. Strain and chill once added to the cream and milk mixture said at the top.

I recommend this flavor because when you are making rolled ice cream at home it is hard to put in chocolate chips so the basic chocolate flavor is good.

Flavor #3: Coconut

In a pot, toast 1 cup shredded coconut until deep golden, 5 minutes. Proceed with the base recipe in the same pot using 2 cups cream, 1 cup milk, and 1 cup coconut milk or cream let custard steep off the heat for 1 hour before straining (press down hard on the solids).

Coconut is good because it is hard to add coconut as an add on in rolled ice cream. Ice cream is a super fun thing to make, so try it yourself!





Pancakes

Pancakes are a really delicious and fun breakfast item. However, they can take some time. But in these times, you have a lot of time to do whatever you want. Pancakes are really great because you can have different flavors they are fun to make and they taste really good. They also have very easy to find ingredients. 

Pancakes are great because you have different flavors. One day you can decide to try strawberry pancakes and another you can do a completely different flavor. This part of pancakes makes them hard to get sick of because they always taste different when you add flavor.

Pancakes are fun to make because they are easy but not to easy at the same time so it isn’t boring. You can also have some fun flipping them and everyone can try. It is a bit funny if someone fails too! 

Pancakes also have really easy to find ingredients. So if you can’t go to the supermarket, especially now, you are most likely to already have the ingredients which means you can always make pancakes.

Pancakes are really good because you can have different flavors, they are fun to make and you most likely always have the ingredients.

Here’s a really good recipe I recommend:

Ingredients:

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • ¼ tbsp sugar, optional

  • 2 eggs

  • 1 ½ to 2 cups milk

  • 2 tbsp melted and cooled butter

Step 1:

In a bowl, mix together dry ingredients. Beat eggs into 1 ½ cups milk, then stir in 2 tbsp melted cooled butter. Gently stir this mixture into dry ingredients, mixing only enough to moisten flour’ don't worry about a few lumps (make sure not to over mix if adding chocolate chips or other fruits). Then add whatever flavors you want. For example, cup chocolate chips, blueberries, and more! if you want bananas, make sure to mash them before putting in, and strawberries (make sure they are cut up into pieces). You may put in whatever seems right to you. Once they are in the fold the batter over them and make sure they are evenly mixed.

Step 2: 

Heat a griddle or large skillet over medium-low heat. Place a teaspoon or 2 of butter or oil on griddle or skillet once hot. When butter foam subsides or oil shimmers, ladle batter onto griddle or skillet, making pancakes of any size you like. Adjust heat as necessary; usually, the first batch will require higher heat than subsequent batches. Flip pancakes after the bubbles rise to the surface, bottoms brown and the sides are dry, after 2-4 minutes. 

Step 3: Cook until the second side is lightly browned. Serve with whatever you want. You can refrigerate or freeze them for later.

Pancakes are a great way to spend some time with family, flipping pancakes, and having a great time!
